Simple Chicken Trail Fajitas
This is an easy way have a home cooked meal while out on the trail. I'm also going to be testing this using all dehydrated ingredients and will update it with the results once we get out on the trail with our dried goods. You can use canned or boxed chicken or simply freeze some and have it on the first night. If You're planning on having fajitas later in your trip. You can always dehydrate the peppers as well as the chicken and keep the seasonings separate. Then at camp, add them to a pan with a little water, heat and cook on low until they all rehydrate. Super Simple! The tortilla is very packable, so no need to do anything with it, but other types of bread can be used too. A pita pocket would work or sometimes, I like to eat my fajitas just out of the pan as a starry with salsa. Still delicious! Lots of options. I would also like to had a side of black beans. They too can easily be dehydrated/rehydrated.  They are super easy and delicious!! Recipe at the bottom of the post.




Trail Fajitas Yield: 2 servings Ingredients 2 Flour Tortilla 1/2 red bell pepper 1/2 green or yellow pepper 1/4 onion, sliced 1/2 serrano chili, diced 1 tsp Taco Seasoning Oil for your pan Salsa of your choice Directions Place a little oil in your pan and add the onions and peppers. Cook over medium heat for a few minutes to soften. Add chicken and taco seasoning. Continue to cook to desired doneness. I like my peppers a little crunchy, so I don't cook them too much. Place hot peppers and chicken mixture in tortilla, top with salsa and enjoy!
